BREVARD COUNTY • MERRITT ISLAND, FLORIDA – Big Dog Kombucha, located at 239 E. Merritt Island Causeway on Merritt Island, will be opening its doors on Sunday, December 19th from 3pm to 6pm
Kombucha is an ancient probiotic drink made from a combination of fermented black and green tea and fresh fruit puree.
During the first fermentation process, sweet tea is used to brew a symbiotic culture of bacteria and yeast. The microbial population in the SCOBY (symbiotic bacteria and yeast culture) rests on the sweet tea for about a week while the bacteria eat the sugar in the sweet tea.
“Kombucha is the fastest growing beverage category in the United States and has grown 17% a year over the past few years,” said Juli Claassen, owner of Big Dog Kombucha.
“The B vitamins, probiotics and organic acids, which all occur naturally, make for a fully functional drink. And ours tastes fantastic, while many others don’t. “

WHAT IS KOMBUCHA?
Kombucha is a fermented tea drink. It is made by adding a symbiotic bacteria and yeast culture (SCOBY) to a solution of tea and sugar. During the fermentation process, the cultures metabolize the sugar and tea components to create a naturally carbonated beverage with a slightly sweet and tart taste that is full of healthy components like B vitamins, organic acids, antioxidants, and traces of alcohol.
Kombucha originated around 220 BC. In northeast China (historically referred to as Manchuria) and was initially valued for its healing properties. His name is reportedly derived from Dr. Kombu ab, a Korean doctor who brought fermented tea to Japan as a remedy for Emperor Inkyo.
Finally, through the expansion of trade routes in the early 20th century, tea was brought to Europe, especially in Russia (as “Kambucha”) and Germany (as “Kombucha sponge”).
IT’S A LIFESTYLE
But kombucha is much more than just a fermented tea product. It’s a lifestyle, or at least a life choice, that many people refer to as life changing. Most people start drinking kombucha because it makes them feel good and many experience improvements in their health; Unfortunately, formal research is rare
The internet is full of anecdotal accounts from people who have reported that their health was due to consuming kombucha, but people lie so I can’t tell what is true and what is not. However, I can tell my own story.
I had tried kombucha before, but it tasted like vinegar and didn’t want anything to do with it. A while after my first experience, I bought myself hard kombucha instead of beer for a party and actually enjoyed it more than beer.
In fact, they have now introduced a brand new botanical beer that has evolved into a whole new category of beverages. * We need to expand that, I’m just not sure how – research.
KEEP IT REAL
Being real is what we do. We do not put anything in our kombucha that is not essentially found in nature in the same form. God just can’t be improved … That means we try to keep our ingredients as natural and unadulterated as possible.
KEEP IT LOCAL
The best way to get that number 1 above is to buy ingredients as locally as possible. We’re also proud Floridians with an uncompromising penchant for this beautiful corner of the world we call home.
Our kombucha gets its amazing taste and eye-catching color straight from the lush nature. We used fresh fruit and raw honey when we started this brewing journey in our kitchen and we have found no reason to deviate from this route.
NON PASTEURIZED HONEY
The pollen that makes our raw, unpasteurized honey is collected from the wildflowers of the Space Coast by a local beekeeper’s worker bees. It is the same wildflowers that prompted Juan Ponce De Leon, who first met land in 1513, not far from our present brewery, to name them “La Florida”
ONLY FRESH FRUIT
We source our fruit from local suppliers and buy locally and organically whenever possible. The only exception to our strict “only fresh fruit” rule is the orange juice in our Liquid Sunshine flavor. Oranges don’t keep well and the only way to get orange juice without preservatives is to use frozen concentrated orange juice. BUT we’re staying local and real – this process was developed in Florida in 1948 and is made entirely from orange juice.
